Chef John's Dutch Baby

  • 2/3 cup milk, room temp

  • 1/2 cup packed flour

  • 3 large eggs, room temp

  • 6-8 drops vanilla aroma (German) or 1/4 tsp vanilla extract (US)

  • 1/4 tsp salt

  • 4 tbsp unsalted butter

  • powdered sugar for dusting


  • Preheat oven to 220°C.

  • Mix milk, flour, eggs, vanilla aroma and salt in a blender until the batter is smooth.

  • Melt 3 tbsp of the butter in a 10in cast iron skillet over high heat until bubbling, pour batter into center of the skillet. It will look like you ruined it, that is normal.

  • Bake skillet in the preheated oven until puffed and golden, 20-25min. Dust with powdered sugar and serve.
